  MY PASSION  

When I was ten years old, out of the blue I just asked my dad If I can make dinner for that evening and confusion was written on his looks but he agreed anyway. I am not so sure about what I have asked him to do I just went for it and made a pork adobo, the famous dish of the Philippines and gladly at my luck it turned out to be delicious. I knew at that moment I wanted to do this growing up, I wanted to cook great dishes and see the satisfaction on peoples faces while tasting my food. I knew I wanted to become a chef at that point of my age and it has not change ever since. I started to watch a lot of cooking videos and masterchef on TV to learn skills and techniques and apply it when I am cooking or baking and each day I grow more and more.

Watching Masterchef he is amazing, he gives inspiring critiques that will bring out the best in you. I love his Italian dishes and his knowledge to run a great restaurant.

She is the queen of sweets, I love her baking recipes and even  bake her famous Birthday cake and popcorn cake which is out of this world. She is a great role model to me. One day she is just working on a bakery and the next thing you know is that she owns the chain of a Milk bar.

He has been my greatest inspiration, since I started watching masterchef he is a force to be reckoned with. He is the best and his Beef Wellington. I admire him for running a great-I-don't-even-know-how-many-stars his  restaurants has, but he is a boss.

Northwest Culinary Academy

When I was searching for the best culinary school in BC, Northwest Culinary Academy in Vancouver pop in first. Their programs are great, the training and the fees, the culinary achievements of students graduated there are good, the jobs after wok are certain and Its an option for me to go there.

Pacific Institute of Culinary Arts

Pacific Institute of Culinary Arts was voted the best school in BC and it is one of the leading schools in the culinary industry in Vancouver, I like how their programs works but the tuition and additional fees for me is a bit higher than the former school. I really like their 90% hands on training but I still have to think about the fees.

I wanna go someday to Le Cordon Bleu in Paris, it is my dream school, but even if I am not gonna go school there if I do my very best at any school I go to, I will make it happen. I will be a successful chef.

Italian Cuisine

Italian cuisine is food typical of Italy. It has developed through centuries of social and economic changes, with roots stretching to antiquity.

Asian Cuisine 

Asian cuisine includes several major regional cuisines: East Asian, Southeast Asian, South Asian, Central Asian, and Middle Eastern/Western Asian. A cuisine is a characteristic style of cooking practices and traditions, usually associated with a specific culture.

American Cuisine

American cuisine reflects the history of the United States, blending the culinary contributions of various groups of people from around the world, including indigenous American Indians, African Americans, Asians, Europeans, Pacific Islanders, and South Americans.

I wanted to grow my knowledge on different cuisines. Each have their own uniqueness and style that I am willing to be taken part of. Its fun getting to experience a new journey and I wanted to travel the world and taste every bits of this amazing dishes. Every dish is important to everyone and I wanted to create my twist within those certain ingredients.

Mexican Cuisine

Mexican cuisine began about 9,000 years ago, when agricultural communities such as the Maya formed, domesticating maize, creating the standard process of corn nixtamalization, and establishing their foodways. Successive waves of other Mesoamerican groups brought with them their own cooking methods.

French Cuisine

French cuisine consists of the cooking traditions and practices from France. In the 14th century Guillaume Tirel, a court chef known as "Taillevent", wrote Le Viandier, one of the earliest recipe collections of medieval France. During that time, French cuisine was heavily influenced by Italian cuisine.

Mediterranean Cuisine 

Mediterranean cuisine is the foods and methods of preparation by people of the Mediterranean Basin region. The idea of a Mediterranean cuisine originates with the cookery writer Elizabeth David's book, A Book of Mediterranean Food (1950), though she wrote mainly about French cuisine.

If you are going big, start from learning the basics.I am learn a lot by watching and practicing.

BAKING

COOKING

I love making sweet treats and delicacies. I already made lots of Macaroons, a couple of Cakes-sponge cake, thousands of cookies and cupcakes, cheesecake, pies, brownies, garlic breads, ham and cheese garlic bread, puto, bibingka, cinnamon roll, muffins, homemade pizza.

I cook a lot of variety of savory dishes, from chicken,beef,pork, fish lamb even just pure vegetables. From grilling, sautee, steam, baked, deep fried, seared. Make meatloafs and lasagna.

I made this three layer drip-fruitcake on my Mom and Dad's 49th Anniversary. It has a plain vanilla buttercream and drip with white chocolate and top with fruits and macaroons.

This cake was inspired by Cristina Tosi's Popcorn cake. It is a vanilla sponge cake layered with my homemade caramel, popcorn and caramel icing.

This two layer mango cake with mango buttercream and whipped cream topped with sweetened mango glazed over the mango.

This is a simple chocolate cake with white chocolate buttercream topped with strawberries and white chocolate glazed.

Back in the Philippines I use to eat Lomi every friday, now that I've moved to Canada there there is not a lot of place that sells this here so to satisfy my cravings I made my own.
